My Cabin from the Alps in San Francisco…

Taking to pieces, getting and rebuilding board by board, my cabin from the Alps, here in San Francisco, to show the authentic and delicious cuisine that I like to cook in a place full of history and emotions.

“Importing a 200 years old cabin from the French Alps to San Francisco, and rebuilding it so it can become my restaurant, it is a challenge a little bit crazy!”

In Courchevel, near the Lake Annecy, or in Paris, Hervé has already tested this savoir-faire by rebuilding these cabins-restaurants, for himself or for his friends in the business: La Mangeoire, Le Dénali, Le Chalet des Pistes in Courchevel,  The Cabin of Marc Veyrat, The Goldfish in Annecy, La fruitière and the Aligre Table in Paris.

“My double skills as a carpenter and as a cook, allowed me to build authentic and warm places, but also very functional for the teams!”

Hervé finds the most beautiful wood boards, often coming from old abandoned cabins, and gives them a new life.

“This lively material puts the clients at ease, and brings conviviality. It allows creating warm atmospheres with a very modern design.”
